I love to bake but don’t often do so because of time. I’m sure many of you are in similar situations! I prefer baking from scratch as I can control the ingredients and what goes into my food. That may change, though, with these very cool new cookies from Pillsbury called …simply Cookies!

I use bking mixes I make up myself that I keep in the freezer. Then when I need bread, muffins, cookies, cake, I just take out the labeled bag and add liquid ingredients. cookiecutter72 at hotmail dot com

One day a week, I go grocery shopping, clean the refrigerator, tidy up my cabinets and prep my food for the week all in one day. My I could not live without appliance is my Foodsaver Vaccum sealer. I prep my meats however needed for the weeks dinners and then seal them. I then put everything in the freezer – this way if things come up and I don't stick to my menu/day plans the meat won't go bad. Then I go and prep all of my vegetables for the week. I then put them in containers/ziplock bags or seal them. The awesome thing with the sealer is that I can peel my potatoes, cut them as needed and seal them per meal and they won't turn black. Trick is to take a few paper towels and get as much moisture off them before sealing. I then clean down the counters, appliances and sweep and clean the floor. This then makes my week a breeze. Dinners are easily thrown together, as I do cook most from scratch, with the exception of some rice/noodle sides and clean up is a breeze.

My cooking stays pretty simple. I usually always have three staple items at each meal for my family: meat, vegetable, and a side (rice, potatoes, salad, or fruit).
I too am a busy stay at home Mom who is starting a new business so I like the cookie tubs where I can just scoop and go! I also like that I can make them as big or as small as I want. My kids like them cooked in muffin tins then we add ice cream to the top! yummy!!!
I make a big batch of boneless chicken on the grill. I use two different marinades. Then I use the leftovers later in the week in a rice/pasta dish. This way I get 3 meals from grilling one time.

I normally have my kids get things out while I am measuring.
I plan ahead, knowing what i am making ahead of time makes things much easier
I sit down at the dining room table and do all my mixing, putting on cookie sheets there. Makes it much easier.
I plan ahead, and cook enough (like meatballs) for at least a month, so all I to do is thaw them when it is dinner time.
I let my husband do all the cooking makes it pretty simple.

I usually try to make recipes with only a few ingredients. It cuts down on costs and simplifies my time in the kitchen.

I keep it simple by making sure my pantry is well stocked so I can whip things up at the last minute. I also do the Sandra Lee thing and use store bought spagehetti sauce (and other things) that I can use for a "base" and add lots of goodies to them – then they seem like homemade! : )

I always have my baking materials handy so when I am in the mood I can make a batch. I also freeze the extra dough so I can make just a few cookies at a time (helps my waist line too.)
