Review of Product: I received the Mediterranean, Italian Bruschetta and SuperFruit Berry flavors – yum! They are so packed with flavor, they really add something great to a salad and a little goes a long way! These aren’t just great for salads though – the superfruit berry tasted awesome as a dip for raw veggies, love the crunch with the sweetness of the dressing. I usd the Italian Bruschetta as a chicken marinade and it was perfect! These are already on grocer’s shelves and come at an awesome price – remember to pair sales with coupons to maximize savings and stock up on these flavor-packed dressings.
Here is an awesome recipe I tried with the Mediterranean flavor – such a great recipe to bring to a picnic or a get-together!
MEDITERRANEAN ROASTED VEGETABLE & SHRIMP SALAD
Prep Time: 20 minutes Cook Time: 25 minutes
1/2 cup Wish-Bone Mediterranean Italian Vinaigrette Dressing, divided
2 large tomatoes, cut into wedges
1 cup thinly sliced fennel or celery
1 large zucchini, halved lengthwise and sliced
2 large shallots or 1 small onion, sliced into thin wedges
1 clove garlic, finely chopped
1 lb. cooked large shrimp
1 tbsp. lemon juice
8 cups arugula or baby spinach leaves
Preheat oven to 425°.
Toss 1/4 cup Wish-Bone Mediterranean Italian Vinaigrette Dressing with tomatoes, fennel, zucchini, shallots and garlic in 13 x 9-inch shallow roasting pan. Roast, stirring once, until vegetables are tender, about 25 minutes. Stir in shrimp and lemon juice. Roast until shrimp are heated through, about 5 minutes. Toss remaining 1/4 cup dressing in serving bowl with the arugula. Top with shrimp and vegetables. Garnish, if desired, with chopped fresh basil.
