Review of Product:  I love shrimp and SeaPak shrimp has always been one of my favorites! They are so fresh tasting and I love being able to pop them in the oven or the toaster oven and be eating them in a few short minutes.  The best part is that Noah LOVES the popcorn shrimp and I feel better giving these to him than a lot of his other favorite foods! The shrimp are super versatile, you can easily use them in recipes or eat them plain with some yummy dipping sauce! This time we tried the butterfly shrimp and I loved how large they were – they came out crispy from the toaster oven and I dipped them in cocktail sauce – perfect dinner!

Here is a great kid-friendly recipe for Southwestern Popcorn Shrimp Wraps – yum!

PREP TIME: 10 minutes
COOK TIME: 12 minutes
MAKES: 4 servings

1 pk 20 oz SeaPak® Popcorn Shrimp OR
1 pk SeaPak® Jumbo Popcorn Shrimp
1 c frozen corn, thawed
1 bunch green onions, thinly sliced (about 1 cup)
1 c mayonnaise (use more if desired)
1 chipotle pepper in adobo sauce, minced (about 1 tablespoon)
Flour tortillas
Shredded lettuce

PREPARE the shrimp according to package directions.
STIR mayonnaise and chipotle pepper in adobo sauce in large bowl. Add the cooked corn, red pepper and green onions.
ADD cooked shrimp to tortilla with lettuce and 2-3 tablespoons of southwest sauce mixture.
Serve immediately.
