Recipe: Blintze Souffle

This blintze souffle is a very simple but super yummy recipe! We make it for Yom Kippur break the fast but it would be a great dish for brunch! You can use any flavor blintzes you like – I often just use cheese like the picture but it tastes good with fruit filled blintzes like blueberry as well!

Blintze Souffle


  • 6 frozen blintzes
  • 1 stick butter
  • 4 eggs
  • 1 cup sour cream
  • 1/4 cup sugar
  • dash vanilla


  1. Preheat oven to 350.
  2. Melt butter and pour onto bottom of 8/8 pan.
  3. Place frozen blintzes on top.
  4. In bowl, mix eggs, sour cream, sugar and vanilla.
  5. Pour on top of blintzes.
  6. Bake for 1 hour
