I recently shared Aunt Tessie’s Kugel with you which is very rich and creamy. My family makes another kind of kugel that is still sweet and delicious but much lighter! It’s served as a side dish just as it is. I usually double the recipe to make two of the 8×8 pans so there are leftovers!
Ingredients
- 8 oz. medium egg noodles
- 1/2 stick margarine, melted
- 3 eggs
- 1 cup sugar
- 1/2 cup raisins
- cinnamon
- 1/4 cup margarine to grease dish
- 8x8 baking dish
Instructions
- Boil noodles for 7 minutes and drain
- In a large bowl, beat eggs.
- Add noodles, sugar, raisins and melted margarine
- Mix well and turn into greased 8x8 pan
- Sprinkle the top with cinnamon
- Bake at 350 for 1 hour. If top gets dark too quickly tent with foil.
