I got a recipe for mushroom meatloaf years ago in the newspaper and have modified it over time. I always get compliments on this meatloaf but you do need to like mushrooms to enjoy it. I’m trying to work on my food photography, I know this picture does not do my meatloaf justice at all! Even if you don’t usually like meatloaf but do like mushrooms, give it a try!
Ingredients
- 4 cloves garlic, minced
- 1 sweet onion, diced
- butter
- 24 oz. sliced white button mushrooms
- 3 lbs ground beef
- 1 egg, beaten
- Italian bread crumbs
- salt pepper
Instructions
- In large skillet melt 2 tbsp butter.
- Add onion and garlic and cook until transparent.
- Add mushrooms and a few more tbsp of butter if needed.
- Cook until mushrooms are tender and remove from heat. Cool for 30 minutes and drain.
- In large mixing bowl mix ground beef, salt, pepper, 1 beaten egg, and mushroom mixture.
- Add bread crumbs until mixture comes together to form a loaf.
- I form loaf in 9x13 Pyrex and bake in 350 degree oven for at least 90 minutes.

Great recipe, I love mushrooms but never thought to add them to Meatloaf!!
