11/20 Pinterest Pin of the Week – Pumpkin Cookies

You have to bring a dessert for Thanksgiving dinner at Aunt Mildred’s house.  You want to do something a little different but still traditional.  You have little to NO time to do it before the big day.  Here is the solution.  From Cookies and Cups we present to you 2 Ingredient Pumpkin Cookies!  That’s right folks, you didn’t misread that, it says TWO ingredients!  How is that possible you ask?  Well, I wouldn’t have believed it until I saw it with my own eyes, but it is magnificently, simply a boxed spice cake mix and a can of pumpkin.  Period.  That’s it.  Nothing else.

Look at them.  Don’t you just want to pop them in your mouth?  I think they would be excellent with hot tea.  Shelley from Cookies and Cups suggests that, of course, you could frost them (cream cheese seems perfect to me), or add white, chocolate or even toffee chips.  Personally, I think adding some nuts would go quite nicely as well, but I would add nuts to most any baked product!

So what do you think?  I’m ready to try them out.  Simple, easy and yummy — they meet my kitchen mantra!
