A Few Shortcuts Weekly Recipe: Easy Pumpkin Pudding!

Amanda from A Few Short Cuts has a simple, yet tasty looking recipe for us, just in time for Thanksgiving.  This week Amanda gives us: Easy Pumpkin Pudding!  EASY is part of the name folks, what could be better than that?  I have to confess that I’m not a big traditional pumpkin pie eater.  I really like the taste but it’s too dense for me.  I don’t know why, it’s a textural thing.  Even though Amanda describes it as “thick, rich, and creamy like pumpkin pie”, the look of it is much lighter to me.  I’m ready to try it out and I think the topping is going to make it even more delicious!

Each week I will highlight one of Amanda’s fabulous recipes. If you don’t have the ingredients or they’re not on sale near you, you could easily print and save the recipes for later use!

I’ve always liked “Just the Filling” of pumpkin pies and not the crust. This pudding sounds great. Can hardly wait to try it! Thank you!

Thanks for this recipe. In the Winter sweet potatoes are a favorite food for us, I need new ways to cook them. This looks so tasty and good for you too!
