Bumble Bee for the Holidays

I love to cook especially for the holidays and have some go-to recipes that I always make each year.  That being said, I always grab a new recipe to try out for my friends and family.  This year I am thinking of trying this Cajun Crab Fondue made with Bumble Bee Crab.  It looks so creamy and yummy – I think I would serve it with toasted baguette slices and also some raw veggies for the healthy types!

Cajun Crab Fondue
Servings: Serves 10 Course: Appetizers

Diet Considerations: Low sugar, Low carb, Diabetic friendly, kid-friendly, Good source of Calcium, Good source of Protein

Ingredients:

3 cans (6oz) Bumble Bee® Crabmeat, drained
6 green onions, chopped
2 cloves garlic, minced
1 large red bell pepper, diced
½ tablespoon butter
1 can (14.5 oz.) diced tomatoes, drained
1 pound soft processed American cheese loaf, cut into chunks
2 cups shredded Monterey Jack cheese
1/8 teaspoon Cajun seasoning or cayenne pepper (to taste)

Directions:

SautÈ onion, garlic and pepper in butter. In a medium crock-pot or sauce pan, add sautÈed vegetables with the tomatoes, cheese and seasoning. Cook on medium-high until cheese is melted. Stir in crabmeat and cook on low for approximately 30 minutes. Serve with tortilla chips or toasted garlic bread squares.

Great with breadsticks!

Nutrition Information: For one serving (172g) Calories 280(from Fat 170), Fat 19g (Saturated 12g), Trans Fat 0g, Cholesterol 90 mg, Sodium 990mg, Total Carbohydrate 7g, Fiber 2g, Sugars 5g, Protein 20g.

This would be a great appetizer for Thanksgiving – sounds yummy with a beer or a glass of white wine on the couch with the football games on and your family chatting!
