I make this corn casserole every year at Thanksgiving and always get a lot of compliments. It is very easy to make and tastes so delicious! I make it that morning and keep it in the frig until it’s time to cook!

Nicole’s Recipes:  Corn Casserole


  • 2 eggs, beaten
  • 1 15 oz can of cream style corn
  • 1 15 oz can of whole kernel corn, drained
  • 1 8oz container of sour cream
  • 1/4 cup butter, melted
  • 1 1/2 cups shredded cheddar cheese
  • 1/2 cup chopped onion
  • 1 4 oz can of diced green chiles, drained
  • 1 8 1/2 oz package of dry corn muffin mix


  1. Preheat oven to 250 and grease a 2 quart casserole.
  2. In bowl, combine eggs, cream style corn, sour cream, and melted butter.
  3. Stir in whole kernel corn, cheese, onion, and chiles.
  4. Stir in corn muffin mix until just moistened.
  5. Bake at 350 for 75 minutes.
