Nicole’s Recipes: Mexican Lasagna

We love Mexican flavors and this Mexican lasagna is an easy alternative to the mess of make your own tacos with all of the same great flavors! It comes together in just a few minutes and everyone in my house loves it!

Nicole’s Recipes:  Mexican Lasagna


  • 1 lb ground turkey (or ground beef or ground chicken)
  • 1 packet taco seasoning mix
  • 10 pickled jalapeno slices (to taste)
  • 3/4 cup water
  • 1 can refried beans (I use the fat free variety)
  • 2 cups shredded Mexican cheese blend (I use 2%)
  • 2 cans of corn
  • 1 cup sour cream (I use light)
  • 1 can diced green chiles
  • 8 large flour tortillas
  • 1 can enchilada sauce


  1. In skillet brown ground meat with japalenos.
  2. Add 3/4 cup water and taco seasoning once browned and cook for a few minutes.
  3. Remove from heat.
  4. Microwave refried beans for 2 minutes
  5. In bowl mix corn, sour cream and diced green chiles
  6. In 9x13 Pyrex pour a little enchilada sauce on the bottom
  7. Place 2 tortillas over the sauce, overlapping if you need to.
  8. Spread some refried beans on tortillas.
  9. Add some of the beef mixture.
  10. Add some of the corn mixture.
  11. Add some cheese.
  12. Add more tortillas and repeat the layers until you reach the top of the dish.
  13. The last layer should be tortilla then cheese.
  14. Bake in 350 degree oven for approximately 30 minutes.
  15. Slice like lasagna and enjoy!
