Nicole’s Recipe: Balsamic Pot Roast with Onions and Carrots

I made this delicious pot roast recently and we loved it! It had a great flavor and was different and more unique than traditional pot roast!

Nicole’s Recipe: Balsamic Pot Roast with Onions and Carrots


  • 4 lb boneless chuck roast
  • Montreal Steak Seasoning
  • olive oil
  • 1/2 cup water
  • 3 large onions, sliced thick
  • 1 cup beef stock
  • 1 cup balsamic vinegar
  • 1/2 cup tomato sauce
  • 1 small bag of baby carrots


  1. Rub meat with steak seasoning.
  2. Sear meat on all sides in hot pan coated in olive oil.
  3. While roast is searing, put the beef stock in a saucepan with the balsamic vinegar and tomato sauce.
  4. Cook until reduced.
  5. Remove roast from pan and deglaze with water.
  6. Add to saucepan.
  7. Arrange onions and carrots on bottom layer of Crockpot.
  8. Put meat on top and pour sauce over top.
  9. Cook on low for 8 hours.

Give this recipe a try! Since it’s for the slow cooker you can set it in the morning and come back to a delicious smelling yummy dinner when you get home!
