Nicole’s Recipes: Stuffed Cabbage Rolls Casserole

I love the taste of stuffed cabbage rolls but hate the time it takes to roll the cabbage, etc.  There is so much room for messing up! This casserole has the yummy taste of stuffed cabbage but the prep is just minutes!

Nicole’s Recipes:  Stuffed Cabbage Rolls Casserole


  • 2 bags angel hair cole slaw (just cabbage, no carrots, etc.)
  • Olive oil
  • Italian Seasoning
  • Salt
  • Pepper
  • 1 cup uncooked brown rice
  • 1 packet Lipton beefy onion soup mix
  • 2 lbs ground beef
  • 1 onion
  • 1 can beef broth
  • 1 can condensed tomato soup
  • 1 8 oz. can of tomato sauce with basil, garlic, and oregano


  1. Saute the cabbage in oil with Italian seasoning for 6 minutes.
  2. Brown the ground beef and onion together.
  3. Put cabbage on bottom of 9x13 Pyrex dish.
  4. Sprinkle 1 cup uncooked brown rice on top.
  5. Sprinkle 1 packet beefy onion soup mix on top.
  6. Add the ground beef and onion mixture. (no need to mix anything, just layer the ingredients)
  7. Pour the beef broth, condensed tomato soup and tomato sauce on top.
  8. Cover and bake for 75-90 minutes or until rice is tender.
  9. Tastes good with parmesan cheese sprinkled on top.
