Nicole’s Recipes: Sweet Potato Casserole

I make this sweet potato casserole for Thanksgiving and a few times a year.  It is really easy and even more delicious! It is a side dish but it’s sweet enough that it could be a dessert for sure!

Nicole’s Recipes:  Sweet Potato Casserole


  • 1 40 oz. can of sweet potatoes, undrained
  • 1 cup sugar
  • 2 eggs
  • 2/3 cup butter, 1/3 of it melted
  • 1/3 cup milk
  • 1 tsp. vanilla
  • 1 cup brown sugar
  • 1 cup chopped pecans (I buy them already chopped)
  • 1/3 cup flour


  1. Preheat oven to 350 and butter a 2 quart baking dish.
  2. Put sweet potatoes in a saucepan and bring to a boil.
  3. Cook for 15 minutes, cool, drain and then mash with a fork.
  4. In a bowl mix sweet potatoes, sugar, eggs, 1/3 cup butter (not melted), milk and vanilla.
  5. Put in baking dish.
  6. In a bowl mix brown sugar, chopped pecans, flour and the 1/3 cup melted butter.
  7. Sprinkle over the sweet potato mixture.
  8. Bake 35 minutes or until knife comes out clean when inserted.

I tried this and it is the best sweet potato recipe ever. The brown sugar and pecans get crunch on top and it is very yummy.
