I love potatoes – I could eat them just plain boiled with some salt but I really love adding garlic to them and baked potatoes have always been my favorite! I don’t eat potatoes that much any more as white carbs like that are definitely not my friend but every once in a while I will make these yummy Hasselback potatoes! They are easy to make and make a grand impression like you did a lot of work!
Ingredients
- 4 baking potatoes
- 4 cloves of garlic, sliced very thin
- olive oil
- kosher salt
- pepper
Instructions
- Preheat oven to 400.
- Scrub the potatoes and pat them dry.
- Slice the potato width-wise as thin as possible making sure not to cut all the way through. You should have at least 12 cuts but hopefully more.
- In between each cut place a slice of garlic.
- Coat potatoes in olive oil and sprinkle with salt and pepper.
- Cook until potatoes are soft inside and crispy outside, at least 60 minutes.
