Nicole’s Recipes: Garlic Hasselback Potatoes

I love potatoes – I could eat them just plain boiled with some salt but I really love adding garlic to them and baked potatoes have always been my favorite! I don’t eat potatoes that much any more as white carbs like that are definitely not my friend but every once in a while I will make these yummy Hasselback potatoes! They are easy to make and make a grand impression like you did a lot of work!

Nicole’s Recipes:  Garlic Hasselback Potatoes

Ingredients

  • 4 baking potatoes
  • 4 cloves of garlic, sliced very thin
  • olive oil
  • kosher salt
  • pepper

Instructions

  1. Preheat oven to 400.
  2. Scrub the potatoes and pat them dry.
  3. Slice the potato width-wise as thin as possible making sure not to cut all the way through. You should have at least 12 cuts but hopefully more.
  4. In between each cut place a slice of garlic.
  5. Coat potatoes in olive oil and sprinkle with salt and pepper.
  6. Cook until potatoes are soft inside and crispy outside, at least 60 minutes.

Thanks for the recipe. I like how it uses fresh garlic instead of powdered. I bet it would be good with braised dill trout!
