This week Amanda at A Few Short Cuts has Valentine’s Day (or any other day, in my opinion) in mind. She created a fantastic “little bite of heaven“: Cheesecake Stuffed Chocolate Covered Strawberries! This looks like the perfect combination to me. Whenever I make cheesecake, I always like it with some strawberry puree on top, so right there she has me covered. But to put it over the top, she dips them in chocolate. Could there be a better dessert?
My personal preference is dark chocolate, so when I make these that is the change I will introduce. You could also try them is milk or even (horrors!) white chocolate. I love the addition of the colored sugar, it gives it a little something extra!

OK – yum – even just strawberries with a cheesecake filling is enough to swoon…let alone the chocolate.

I adore this!! Not just for Valentines Day, but what an awesome home-made gift this would be for any event or holiday. Such a unique and delicious twist to the standard dipped strawberry. Those are delicious too, but this is decadent!
