This is a recipe I have already made so I can guarantee it is wonderful! And easy! This dish, Parmesan Chicken Bake, comes to us from Carole at My Kitchen Escapades. Doesn’t it look yummy? As soon as I saw it I knew I wanted to try it!
I find that baked chicken breasts are often dry; these absolutely are not. I think the slathering in yogurt (I can’t get over the phobia of heating up mayo) is the magic secret. I didn’t use a seasoning salt, but instead a herb blend made on a local herb farm here in NC and just salt and pepper, so I didn’t have the problem of it being too salty. The chicken was really moist and flavorful. I had it with pasta and Alfredo sauce, but I can imagine is many different scenarios. I will also try the yogurt slathering with completely different spices like curry or texmex. Please give it a try and let me know what you think.
