A Few Shortcuts Weekly Recipe:Chicken Spinach Taquitos

This week’s recipe from Amanda at A Few Short Cuts is a little bit of Mexican heaven: Chicken Spinach Taquitos!  She uses her Citrus Lime/Chili Crockpot Chicken,  homemade guacamole and salsa.

You know I like finger food and since these taquitos are baked instead of fried they are waist-line friendly.  A perfect combo for me.  I’m not sure I’d do homemade guacamole and salsa since I have brands I’m very fond of, but the crockpot chicken is definitely going to get a try!  If you try it, let us know what you think.

These would be perfect for Easter snacks before dinner. I like finger food too.Thank you for sharing this yummy looking recipe :)

These seem simple and delicious. I love taquitos and I have sour cream, lettuce, tomatoes, and avocados to go with them. I always have salsa and if not so easy to make. I even have fresh cilantro this week. I was looking to put together a meal plan for the week and I am already a good way there with this recipe. Yea!

That sounds wonderful; so many uses for that crock-pot chicken. I already did something sort of similar making a quesadilla with it.

I love this recipe I will use it I have a freezer full of chicken and am running out of ideas thanks !
