A Few Shortcuts Weekly Recipe: Summer Berry Icebox Cake

This week’s recipe from Amanda at A Few Shortcuts is one you can make for all the patriotic holidays!  Summer Berry Icebox Cake is quick, light and refreshing; all the things you need in a summer dessert.  I grew up eating icebox cakes.  In the Carolina Low Country every family had a favorite recipe and whatever event you attended throughout the long summer there would always be a variety to choose from.  It was a kid’s paradise!  This recipe is great because it uses the berries in season now, and it just looks good!

The only concern I have is the layers of graham crackers.  When you slice down through it, unless you are right on the line between the crackers, you are going to get in trouble.  But you don’t want to go to all the trouble of making a crumb crust, so I say… Break the crackers into quarter-ish size pieces, mix them into the whipped topping and then do 3 or 4 alternating layers.  Then when you cut into it, you won’t have to be on a break line.  What do you think?

This looks so fresh and easy! It reminds me of a fruit and whipped cream pie my mom used to make. We will probably make this for a barbecue and even let the kids help out; that will be fun!
