Breakfast After Dark Recipe with I Can’t Believe It’s Not Butter

You all know that my husband is a chef so it’s rare for me to cook! I love doing breakfast for dinner because I love breakfast food and it usually takes less time to cook it as well!

Celebrity, Lisa Vanderpump, has teamed up with I Can’t Believe It’s Not Butter! to show you how to have the most important meal of the day–after dark. In partnership with I Can’t Believe It’s Not Butter!, Lisa has created a series of “Breakfast After Dark” webisodes showing you how she keeps things hot in the kitchen with her hubby and the other men in her life, by enjoying her favorite breakfast foods for dinner. Here is a great recipe for toasted breakfast burritos courtesy of I Can’t Believe It’s Not Butter! that I made for dinner recently! One thing I never thought of is that you can even pair these foods with cocktails and we enjoyed these burritos with bloody marys which tasted delicious and was very complimentary.  This recipe was very easy to make and you can adapt the ingredients to your liking.

Toasted Breakfast Burritos

Ingredients

  • 1 1/2 Tbsp. I Can't Believe It's Not Butter!® Spread, divided
  • 1/2 cup finely chopped assorted fresh vegetables (peppers, tomatoes and/or green onions)
  • 2 slices turkey bacon, chopped (optional)
  • 2 eggs
  • 1 Tbsp. water
  • 1 Tbsp. shredded low fat cheddar cheese
  • 2 (6-in. ea.) fajita size whole wheat tortillas

Instructions

  1. Melt 1 tablespoon I Can't Believe It's Not Butter!® Spread in medium nonstick skillet over medium-high heat and cook vegetables and bacon, stirring occasionally, until vegetables are tender and bacon is crisp, about 4 minutes.
  2. Meanwhile, combine eggs and water in small bowl with wire whisk. Add eggs into skillet and stir until eggs are set. Remove egg and vegetable mixture from skillet and evenly divide between tortillas. Top with cheese; then roll.
  3. To seal and toast burritos, wipe skillet with paper towels and melt remaining 1/2 tablespoon Spread over medium heat. Arrange burritos, seam-side-down and cook, turning once, until golden brown, about 2 minutes.

I love this recipe. It something I would love making for my family. It also sounds pretty healthy.

Ooo – this is a nice , healthy recipe – I like turkey bacon and cheesy meals.
