Cooking for Spring with Fisher Nuts and Giveaway

We love Fisher nuts and not just because our last name is Fisher! Fisher is a brand we trust and I find their nuts to be delicious and super fresh every time I buy them! Cooking with nuts adds some great nutrition to your dishes – not to mention a lot of flavor! Change up your cooking this spring by adding some nuts!

Spring is here, which means that it is time to get outside and enjoy the change in weather. Nothing says springtime like fresh, new recipes for cooking and baking. Fisher Nuts is continuing to partner with Food Network Chef Alex Guarnaschelli, a recent winner on Food Network’s Iron Chef and a regular judge on Chopped, to offer you a fresh twist on spring recipes. Using seasonal ingredients like fresh nuts and produce can help bring your recipes to life and Chef Alex has recommendations for taking your spring cuisine to a new level.  

I had a hard time deciding which of Alex’s fun recipes to try with my Fisher Nuts – would it be strawberry crostata with walnuts or baked clams with walnuts? I ended up choosing green bean almond salad and loved this recipe! It was very easy but really jazzed up boring old green beans! My whole family loved this dish and the recipe is now a family favorite! Here it is:

Green Bean and Almond Salad

Ingredients

  • 1 teaspoon vegetable oil
  • ½ cup Fisher® Chef’s Naturals Slivered Almonds, lightly toasted
  • 1 tablespoon Dijon mustard
  • 1 tablespoon fresh lemon juice
  • 1 tablespoon Sherry vinegar
  • ½ teaspoon capers, roughly chopped
  • 1 teaspoon of brine (liquid) from the jar of capers
  • 1/3 cup extra-virgin olive oil
  • 1 teaspoon salt
  • 1 pound green beans, ends trimmed

Instructions

  1. Heat vegetable oil in a small skillet over medium heat.
  2. Add the slivered almonds and stir until they are golden brown.
  3. Remove almonds from pan and set aside.
  4. In a medium bowl, whisk together the Dijon mustard, lemon juice and Sherry vinegar.
  5. Add the capers, caper juice.
  6. Slowly whisk in the olive oil and set aside.
  7. Bring about a quart of water to a boil in a large.
  8. Add salt.
  9. Prepare an ice bath by filling a bowl large enough to hold the green beans with cold water. Add some ice cubes and put a colander in the middle of the bowl.
  10. Stir the green beans into the boiling water and allow them to cook, 2-3 minutes or until crisp-tender.
  11. Use a slotted spoon to remove them from the water, transferring them immediately to the colander inside the ice bath.
  12. Allow them to sit in the ice bath for a few minutes, swirling them gently in the water to assure they are all cooling.
  13. Transfer the green beans to a kitchen towel spread on a flat surface and thoroughly dry them.
  14. Place dried green beans into a medium bowl.
  15. Toss with the vinaigrette and the toasted almonds.
  16. Serve immediately.
