A Few Shortcuts Weekly Recipe: Easy Pumpkin Fudge

This week, Amanda at A Few Shortcuts, is getting us into the tastes of fall.

Easy Pumpkin Fudge is a mixture of white chocolate, canned pumpkin and pumpkin pie spice (for which Amanda also has a recipe!).   Now a lot of recipes call for evaporated milk, sweetened condensed milk, karo syrup or even marshmallow fluff as the binder.  This recipe, on the other hand, calls for Coconut Oil (or butter).  I’m not sure has that is doing to the recipe, but I’m intrigued enough to search it down some more.  I’ll try to let you know what I find.  If you know why it’s be used, please post the info in a comment for us all to know!Easy-Pumpkin-Fudge

I have never ever even heard of this before but now I have to try it. I want to make this for halloween and what a fun gift to give a loved one for the season. Thanks for sharing this one and have a great day.

Never heard of Pumpkin Fudge! I love Chocolate Fudge so I’ll have to try this out! Thanks for sharing the recipe.

I’ve never had pumpkin fudge but I bet with walnuts, it makes a really nice seasonal treat.

Ohhhh my gosh this sounds so absolutely delicious! I crave pumpkin all during fall, Sept, Oct, Nov every year anyway but this recipe would be an extra yummy way to treat myself to pumpkin! Mmmmmm!!!

I am going to have to make this right away! I am always looking for recipes to make using pumpkin, especially this time of the year. I love that I can use coconut oil!
