I was so excited to participate in the Have A Grain Blogger contest and took some time to come up with a yummy recipe! I really enjoy mixing sweet and salty flavors together and knew I wanted to make something with pumpkin! So I concocted a pumpkin pretzel chocolate chip bread for you! It is absolutely delicious and was simple to make! Here are some pictures as I made it and then the recipe!

Pumpkin Pretzel Chocolate Chip Bread

Pumpkin Pretzel Chocolate Chip Bread

Ingredients

  • 1 cup white sugar (I used organic)
  • 1/2 of a 15 oz can of pumpkin puree
  • 1/3 cup oil (I used rice bran oil, could use vegetable oil)
  • 2 1/2 tbsp water
  • 2 eggs
  • 1 cup and 3 tbsp Hodgson Mill Whole Wheat Flour
  • 1 tsp ground cinnamon
  • 1 tsp ground nutmeg
  • 3/4 tsp baking soda
  • 1/2 tsp salt
  • 1/2 cup semisweet chocolate chips
  • 3/4 cup smashed pretzels (I put in baggie and then smashed with rolling pin)

Instructions

  1. Preheat oven to 350.
  2. Grease a 9x5 loaf pan.
  3. In a large bowl, mix together sugar, pumpkin, oil, water and eggs.
  4. Beat until smooth.
  5. Add in flour, cinnamon, nutmeg, baking soda and salt.
  6. Add chocolate chips and pretzel pieces and combine.
  7. Pour into loaf pan
  8. Bake 1 hour or until toothpick comes out clean.
