Concord Foods, makers of reconstituted lemon and lime juices, packaged in easy to store fruit shaped containers, invites you to celebrate food experts’ prediction that lemon will be a hot flavor in 2014.

Kazia Jankowski, associate culinary director for the Sterling-Rice Group explains the allure of lemon in this way: “Lemon is pure. Lemon is versatile. Lemon is nostalgic. For those reasons, it will be the flavor of next year. Lemon’s bright flavor is fresh and unadulterated. It ties into the cuisines of the Mediterranean, which are growing in popularity. Plus, it brings back memories of lemonade afternoons, Grandma’s lemon bars, and summer desserts with lemon meringue pie.”

I decided to try out the Concord Foods reconstituted lemon juice in my lemon coconut bread recipe.  I love this bread since it is light and has such a bright citrus flavor.  I couldn’t wait to see if the Concord Foods reconstituted lemon juice kept the flavor the same! I assembled the ingredients and got to work!

I am happy to report that the bread turned out great! My husband had no idea I didn’t use fresh lemons for it! Such a great timesaver and super affordable! I love that the taste of the bread remained bright and fragrant!
