A Few Shortcuts Weekly Recipe: Zucchini Pizza Bites

by Pennie on January 17, 2014

This week’s recipe from Amanda @ A Few Shortcuts is more finger food for the upcoming Super Bowl (and any other time you want appetizers).  The recipe; Zucchini Pizza Bites, is a healthy spin on regular pizza rolls.

This recipe uses ingredients you probably have around the house and is quick to make (think teenagers)!  The healthy twist is that you use slices of zucchini for the crust that you broil for a couple of minutes before you add the toppings.  Then you stick them back under the broiler and in barely minutes you have a yummy snack!
Each week I will highlight one of Amanda’s fabulous recipes. If you don’t have the ingredients or they’re not on sale near you, you could easily print and save the recipes for later use!

These look delicious! I wish I had this recipe this summer when I had all that zucchini growing in my garden.

What a perfect small bites appetizer! I’m making the recipe for my next shin-dig.
