Driscoll’s (www.driscolls.com) is kicking off a campaign to encourage Americans to replace their unhealthy 3pm snacks with healthy and delicious blueberry alternatives!

Dark Chocolate Blueberry Bark

Prep Time:10 minutes plus cooling
Cook Time:0 minutes
Servings:18

Bring together nutrient powerhouses in this easy-to-make blueberry bark. Toasted almonds and soynuts add crunch to balance out the juicy berries and rich dark chocolate creating a perfect combination in every bite. Store any uneaten bark in the refrigerator.

Ingredients

  • 1 package (6 ounces or 1 1/4 cup) Driscoll’s Blueberries
  • 16 ounces dark chocolate, chopped (about 2 cups dark chocolate chips)
  • 3 ounces slivered almonds, toasted and cooled to room temperature
  • 1/3 cup soynuts

Directions

Line a rimmed baking sheet with parchment paper. Draw an 8-inch by 10-inch rectangle on the paper with a pencil. Turn the paper over. You should be able to see the outline of the rectangle.Melt chocolate in a microwave oven or over a double boiler until smooth. Use a rubber spatula to spread chocolate on the parchment paper up to the edges of the rectangle.

Sprinkle blueberries, toasted almonds, and soynuts onto chocolate. Use fingertips to press toppings gently down into melted chocolate. Cover loosely with plastic wrap and refrigerate 1 hour.

Use a sharp knife to cut bark into 9 squares. Cut each square in half diagonally and serve immediately.

Blueberry-Peach Smoothie with Flaxseeds

Prep Time:5 minutes

A sweet and healthy smoothie perfect for breakfast or an on-the-go snack. This smoothie packs it all in, fresh fruit, low-fat milk, Greek yogurt and flaxseeds. The ingredient list reads like a smoothie all-star team!

Ingredients

  • 3/4 cup Driscoll’s Blueberries
  • 1 small peach, roughly chopped or ½ cup frozen peaches
  • 1/2 cup almond milk or favorite juice
  • 1/2 cup non-fat plain Greek yogurt
  • 1 tablespoon ground flaxseeds
  • 2 tablespoons honey
  • 3 ounces ice

Directions

Blend blueberries, peach, almond milk, yogurt, flaxseeds, honey and ice in a blender until pureed and smooth, stirring several times. Serve immediately.

My grandson LOVES blueberries, so we always have them in the house, both fresh and frozen.  They are not only a great snack, taste-wise, for him and the rest of the family they are so good for all of us.  They’re high in antioxidants, are known to improve memory function and can reduce the effects of aging.  So I eats lots of them as well!  Join my family and Driscoll’s in upgrading your 3 pm (or any time) snack!
